As a child growing up in Inverness, California, Claire Ptak would spend her summer afternoons foraging for huckleberries to turn into pies. Her upbringing in the free-love community instilled in her a love for using what was available and seasonal. After pursuing a degree in film and working at Chez Panisse, Ptak moved to Hackney, London, where she fell in love with the British baking tradition despite its fussiness. She opened Violet Cakes in 2010, which represents “a marriage of two worlds: pairing English ingredients with a Californian sensibility.” Her bakery offers a beautiful and light-filled space painted with a color palette lifted from artist Richard Diebenkorn’s ’70s California landscapes. Ptak distills everything she’s learned over the years at Violet Cakes into a cookbook called Love Is A Pink Cake, which was initially intended to be divided by seasons but ended up being divided between recipes inspired by California and recipes typical of Britain due to pandemic restrictions. The transferable wisdom contained in her book will teach you how to grow geraniums on your windowsill, soak poppy seeds in black tea to bring out their flavor, and improve upon classics like yellow sheet cake with chocolate frosting and treacle tart with whipped cream. A recipe for Violet Cakes’s much-loved Bakewell Bars is provided in the article.
